GF Quinoa Chai Granola

Gluten Free Chai Granola

Gluten and Refined-Sugar Free Chai Granola

1/4 cup quinoa flakes
1/4 cup raw pepitas (pumpkin seeds)
1/4 cup raw sunflower seeds
1/4 cup hemp seeds
1/4 cup coconut flakes
1 tbls chia seeds
2 tbls coconut oil
2 tbls maple syrup
1/4 tsp cinnamon
1/4 tsp ground ginger
1/8 tsp ground clove
1/4 tsp ground cardamom
zest of 1 orange
1 tsp vanilla
pinch or two of flaky sea salt
Parchment Paper

Preheat the oven to 350 degrees. Line a sheet pan with parchment paper.

Melt the coconut oil. Stir in the maple syrup, seasonings, vanilla, and orange zest.

Toss with all the remaining ingredients, except the salt. Pour on the parchment lined cookie sheet and spread into a single layer. Sprinkle just a pinch or two of flaky sea salt.

Bake until just lightly golden brown, 10-20 minutes. Keep a close eye on it, you may want to mix it about at 10 minutes.

The granola will harden as it cools.

Quick Skillet Apple Crisp

Granola
2 tbls coconut oil or butter
2 tbls honey or maple syrup
1 cup quick cooking oats
¼ tsp cinnamon
½ cup various nuts, seeds, dried fruit or coconut flakes
Pinch of salt
Optional add-ins: raisins, craisins, dried apricots, candied ginger

Apple Skillet
2-3 organic apples, chopped
1 tbls coconut oil, ghee or butter
1 tbls lemon juice
1 tsp cinnamon
½ tsp allspice
1 tsp vanilla
¼ cup coconut sugar or maple syrup

GRANOLA: Melt the coconut oil in a large skillet over medium heat, stir in the sweetener. Add the oats, cinnamon, pinch of salt and any nuts, seeds or coconut flakes.

Stir continuously with a wooden spoon until the mixture is golden brown, about 5 minutes. Toss in any dried fruit, you are using. Remove from heat and pour into a dish.

APPLES: Return the pan to the medium heat. Melt oil or butter in a skillet; add the apples, lemon, cinnamon and allspice, saute until the apples become softened, about 5 minutes. Toss often.

Add in the vanilla and sugar and continue to cook until the sauce thickens and apples are tender, just a few more minutes. If the pan gets too dry, add a few tablespoons of water.

Sprinkle with granola and enjoy warm. Try topping with our Banana Ice Cream, or Dreamy Coconut Whipped Cream or our Strawberry nIce Cream.

Skillet Granola

Skillet granola? Who knew that all you need to make granola is a skillet, some oats and a little sweetener? I make a lot of granola (like this grain-free granola), but I usually bake it slowly in the oven. Now it’s on! Have skillet, will travel!

 

2 tbls coconut oil or butter

2 tbls maple syrup or honey

1 cup quick cooking oats

¼ tsp cinnamon

½ cup various nuts, seeds, dried fruit or coconut flakes

Pinch of Himalyan Pink Salt

Optional add-ins: raisins, craisins, dried apricots, candied ginger

 

Melt the coconut oil in a large skillet over medium heat, stir in the maple syrup. Add the oats, cinnamon and any nuts, seeds or dried fruit you are using.

Stir continuously with a wooden spoon until the mixture is golden brown, about 5-10 minutes. Remove from heat, cool slightly and enjoy.

Easy Grain and Nut Free Granola

Ingredients
1/4 cup raw pepitas (pumpkin seeds)

1/4 cup coconut flakes

1 tsp chia seeds

2 tbls coconut oil

1 tbls maple syrup

3/4 tsp ground cardamom

Directions
