I’m a big proponent of protein intake within one hour of waking up. But I get tired of yogurt/dairy/eggs.
So I created this super simple Sheet Pan Turkey Loaf. Mix, pat into a pan, and bake, then cut into squares and freeze. I pull a couple of squares out, 30 seconds in the microwave and munch away. When I remember, I’ll even place a few squares in the fridge overnight to defrost.
These Sheet Pan Turkey Loaf Patties have all the macro-nutrients: protein from the ground turkey, carbs from the wild rice and roasted sweet potato and good fat from the olive oil.
You could easily throw an egg or two in here, but it’s not needed. Change up the dried herbs to fit your needs. It’s a simple high-protein meal prep recipe.

Sheet Pan Turkey Loaf Patties
1 lb ground turkey
1 cup cooked wild rice
1 small cooked sweet potato
2 tsp dried sage or tarragon
1/2tsp dried thyme
1 tsp pink salt
Preheat the oven to 400 degrees. Mash the cooked sweet potato. Mix all the ingredients until well combined.
Pat the meat mixture onto a greased baking pan, about 1/4″ thick. Bake for about 30 minutes until the turkey is cooked through. Cool, cut and store in the fridge for up to 5 days or place in the freezer.
