I really love this idea of getting back to basics. I also really love TEXTURE. Put those together and you get my rustic approach to food- like this Rustic Arugula Pesto. It doesn’t need any kind of electricity- just your chopping muscles. And it ends up having so much more ‘chew’ to it than the ones that are more like a creamed sauce. Anytime you can get texture in a dish it’s going to be more enjoyable to eat.
Use this on pasta, in sandwiches, over grilled meats or slathered on a tortilla to create a super simple pizza. Yup, it’s basic and it’s delicious.

Rustic Arugula Walnut Pesto
2-3 cups arugula
2 garlic clove
1/4 tsp Himalayan pink salt
Pinch of cayenne
1/3 cup toasted walnuts
zest and juice of 1/2 lemon
1/4- 1/3 cup extra virgin olive oil
On a large cutting board, chop the garlic. Place the arugula on top of the garlic and chop together. Add the salt, cayenne and walnuts, keep chopping to mince it all together. Squeeze the lemon over top (add zest if you really like zing!) Give it one more chop together.
Scoop into a bowl and stir in just enough oil to bring it together.

Corn Tortillas
Roasted Veggies
Optional: Cheese or artichoke hummus, Cumin & Coriander Spiced Oil
Preheat oven to 350 degrees. Layer the pesto on the tortillas, top with the veggies and cheese. Bake on a sheet pan until crispy.
