When I saw this Viral Pickle Sandwich floating around IG, I couldn’t resist trying it out. I really love pickles, so much so that I even drink the pickle juice. Great electrolytes!
Melted and crisped cheese surrounding sandwich-stuffer pickles, what’s not to love? Here’s my honest thoughts.
The concept is fun and a neat way to skip the high-carb bread in a sandwich. Layer shredded cheese and pickles on a sheet pan and bake until crispy. Then you use it as the ‘bread’ for a sandwich; three pickles form the top bread and three form the bottom bread.
Nobody mentions how greasy this ‘pickle cheese bread’ is—kind of like how greasy a quesabirria taco is. And it’s quite fragile. Some people roll it up like a burrito, but I found that made it way too big and clunky to eat. It’s also challenging to eat it as a flat sandwich, so it comes down to your preference.
Definitely use thin fillings. Mine is stuffed with beef shawarma, arugula, and a bit of tzatziki. Thin deli meat will do better here.
Overall, the flavor is fun to make once. I’m glad I tried the Viral Pickle Sandwich, but I found the whole thing a bit gimmicky.

Viral Pickle Sandwich
6 pickle slices
1 cup shredded cheddar cheese, divided
Sandwich fillings of your choice
Directions: Preheat the oven to 400 degrees and line a sheet pan with parchment paper.
Dry the pickles between two pieces of paper towel.
Sprinkle half of the cheese in an oval shape. Lay the pickle slices over the cheese. Top pickles with the remaining cheese.
Bake for about 20 minutes. The edges should be golden and crisp. Remove from oven and let sit for 10 minutes to further crisp and hold together.
Carefully cut into two pieces and layer on your sandwich toppings (or layer on sandwich toppings and roll up.)
