This soup comes together in minutes with the help of meal prepping.
Taking the time to meal prep helps you manage your health, time and money. Using pre-roasted veggies and pre-cooked meat gets you most of the way there. But the secret ingredient is using pre-made sauces, pesto, or dressing is what will give any soup killer flavor. Create a this 5-minute soup and enjoy!

5-minute meal prepped soup
1 tbls coconut oil
1/4 onion, chopped
1 stalk celery or Swiss chard
2 cups roasted veggies
leaves of 1 Swiss chard, handful of spinach or other leafy green
4 cups broth
2-4 tablespoons of any dressing, salsa, pesto or gravy
salt and pepper to taste
Optional: 1/2 cup pre-cooked chicken or turkey, chopped
1/4 cup frozen peas
Heat the oil over medium heat in a soup pot, add the onions and celery stalk, cook a few minutes just to soften.
Add the roasted veggies, leafy greens, broth, meat (if using), sauce flavoring and peas. Let simmer for a few minutes.
Taste, adjust salt and pepper.
