I’m obsessed with making gluten free flat bread recipes. No reason to be deprived just to avoid gluten. Like my GF Sweet Potato Flat Bread, GF Chickpea Socca, Cassava Tortillas, Avocado Tortillas or yeast free pizza crust.
This is yet another in a line of fabulous, easy flat bread, pizza, tortilla -like recipes with one difference- it uses yogurt. I haven’t come up with a better name – but I use these as a base for pizza, a simple -topped flat bread, folded up like a taco or flat out like a tostada and even in place of naan bread. Ohhhh, and baked crunchy and crumbled on a salad for croutons. Can you say VERSATILE!?

Gluten free yogurt bread, pizza, flat bread, tortilla- like recipe.
3/4 cup gluten free flour (I used Bobs Red Mill 1to1 flour)
1/3 cup full fat yogurt (I used homemade coconut yogurt)
1 tbls extra virgin olive oil
1/2 tsp pink salt
1 tsp baking powder
1 tsp olive oil
~water as needed
Warm a cast iron, or other, skillet.
Whisk together the gf flour, salt and baking powder. Mix in the yogurt and oil, use your hands to form a ball. If it feels too dry or isn’t coming together, add 1 tbls water at a time until the ball forms. Lightly knead together.
Cut into 8 balls (smaller sizes are easier to control, dust the surface with a bit of flour then pat or roll out a ball to a flat bread / tortilla (thinner) shape.
Place on a hot griddle until golden brown on one side. Flip over and brown on the other side. Eat while warm.
